One just like mine, I might note, in which I've made Approx 3000 whole wheat loaves with My "Ol' Bessie". I've easily made over 3000 loaves whole wheat bread (within 30+ years). Plus cakes, cookies, smoothies - you name it.
I've read that the newest designed Bosch Universal mixers can knead up to 21 cups flour! Imagine that!
TESTING recipe for recipe, the Bosch always makes better "bakery quality" loaves.
A Bosch Universal, like mine... does much better job at kneading over any other mixer.
Anywhere from 2-5 (1 1/2 lb) loaves of ww flour loaves!
Even more all-purpose or bread flour loaves!
Now, I read if it's possible, the newer Bosch Universal Mixers are even better machines.

Note: Whole wheat dough must knead for 8 minutes to obtain the proper gluten development.

KitchenAid Professional Mixers (newer than 2007) are actually great machines.

Knead a single, "nice quality" ww flour loaf.
And up to "great quality" 2 bread flour loaves

Note: (Prior to 2007) any 6 qt KitchenAid Pro mixer, like the one in the video, unfortunately can't handle ww dough efficiently. Better to ONLY knead a single loaf, 3 cups of ww flour recipe.
Knead just 4 minutes at a time
Rest the machine 20 minutes.
Knead again for 4 minutes.
Never knead 2 loaves (6 cups or more ww flour) in these older mixers.
Hey if you own a older and cheaper KA, say any made prior to 2007, even most the lower level machines don't do bread well.
Just save your pennies, for the newest Bosch, or perhaps a new KA Professional (made since 2007).
